Gelecta has created SenSession with this in mind: masterclasses held by World Champion Pastry Chefs designed to refocus the relationship between a dessert and the palate, and provide a unique sensory experience.

Back in Time Towards the Future is a dessert designed with one goal in mind: pure sensory ecstasy. A crescendo of textures that creates the perfect structure for the complex aromatic notes of the 3 chocolates that merge on the palate to release delicate citrusy fragrances, appealing exotic flavours and then unexpected well-balanced hints of spices.

An astonishing, irrepressible sensory journey beginning with the palate, and continuing with the mind, which turns to reminiscences of happy, intimate times stored in our deepest, innermost memories.

Memories of Sweet Dreams is a fresh wonder for the palate. A dessert that is simple, yet capable of treating the palate to a harmonious progression of unexpectedly fresh and incredibly light sensations. Sweet notes of mango, banana and apricot stimulated by tangy passion fruit. All rounded off by Sicilian almonds from Val di Noto, which soften the finish with noble sweetness. 

Yet it is the extraordinary combination of different textures... from spongy to soft, from creamy to crisp... that manages to bring out the immense pleasure of fruity aromas on the palate.
