Last April in London, a memorable chapter in the history of international pastry-making was written, transforming an icon of Italian tradition into an unprecedented feat of food engineering. It was not merely a test of culinary skill, but the creation of the longest tiramisu ever made, reaching the incredible official length of 440.58 meters and earning a Guinness World Record.

A Challenge Beyond Length: The 8-Centimeter Limit

The project, led by Gelecta by Italgel’s Innovation team, had to overcome technical challenges that went far beyond simply achieving the required length. In fact, to qualify for the Guinness World Record, it wasn’t enough for the dessert to be long: the judges required a minimum height of eight centimeters maintained consistently along the entire length. Any structural collapse along the nearly half-kilometer stretch of cream and ladyfingers would have resulted in immediate disqualification.

 

 

Seven Hours of Technological “Hell”

The team found itself working under critical conditions, described by those involved as “seven hours of hell”. The main challenge was the ambient temperature: working with tons of mascarpone cream for such a long period outside the refrigerator posed a constant risk of structural collapse. Managing the workflow—including assembly, decoration, and official measurements—under these conditions required meticulous logistical and technological planning.

 

The Solution: Gelecta Cream and Food Technology

The true “technological heart” that prevented the disaster of the cake collapsing was the adoption of a cutting-edge synergistic system: Gelecta Cream. This food technology, consisting of a blend of gelatin, fiber, and plant-based proteins, gave the mascarpone cream the resilience needed to withstand environmental stresses.

The requirement, moreover, was not only structural but also sensory. Since 1,500 people had already pre-purchased their slice for charity, the dessert had to maintain its creaminess and delicious flavor intact.
