SIRHA 2021: the dawn of a new world in patisserie

GelectaSpace was created by Gelecta and presented at SIRHA 2021: an experimental, conceptual space in which a possible future post-pandemic direction for patisserie was put forward together with World Pastry Champion Francesco Boccia.
In order to outline the possible future and inspire Pastry Chefs all over the world, GelectaSpace offered its guests two Immersive Experiences: ARCHITEXTURE and TOUCH THE FEELING.

The first EXPERIENCE is a conceptual show in which textures in patisserie are celebrated by surprising design and strict techniques. In a new guise as Artist as well as world pastry champion, Francesco Boccia sets out a major pathway to a new post-pandemic beginning through 3 extraordinary masterpieces. The three works of art have evocative names: THE NEW WORLD, THE SEARCH FOR LITTLE MOMENTS OF PLEASURE, and A BETTER PLACE. All Concepts that encapsulate key messages setting out the direction for the desserts of the future.

The second EXPERIENCE is a full immersion of the palate into the realm of taste and sensory ecstasy. Francesco Boccia accompanies participants on an enthralling taste journey into haute patisserie dedicated to their senses, and focused on tactile interaction with the patisserie. The result is quite unique: the palate becomes capable of interpreting and feeling the pure emotion of a dessert. Guests are led by the Chef step-by-step through the tasting of a dish. It all begins with UNBOXING... a bright, beating BOX arrives at the table, and the experiential journey starts with the discovery known in the trade as UNBOXING. And then…. Sensory ecstasy.
